2 c oats
1/2 c puffed rice/rice krispies
1/4 c coconut, dessicated
1 tbs ground flax/linseed meal
1 tsp hemp seeds
1 tsp chia seeds
1/2 c raisins or cranberries or dried fruit
1/2 c slivered almonds
1/3 c chocolate chips
1/2 c peanut butter or almond butter
1/2 c brown rice malt syrup (or honey or maple syrup)
Line 8x8 pan with plastic wrap
Mix all the dries in a bowl, set aside
In a large pan, heat peanut or almond butter with brown rice malt syrup and vanilla on low heat just to combine. Slowly mix in dry ingredients in stages. It's pretty crumbly, but will come together. When everything is coated, turn into prepped pan, pressing down firmly. Place covered in fridge for about 2 hours until firm enough to cut. This made 10 bars and were eaten pretty quickly. Store in airtight container or freezer. You could also swap out ingredients for your more fave items, but keep dries to liquids ratio close to the same.
UPDATE: please note, you may want to fold in chocolate chips after the mixture has cooled down a little bit as they do get a little melty.
